Hubby and I went on a wonderful weekend birthday getaway to Flagler Beach, which is south of St. Augustine. Flagler Beach is such a cute little beach town and the Funky Pelican is located right on the pier. We were perusing menus deciding where to eat, and their offering of Vegetable Paella caught my eye.
I love paella. I haven’t had it in a long time and usually it comes with seafood. This paella was full of onions, peppers, shrooms, zucchini, squash, broccoli and peas, tossed with rice and a touch of saffron. While it certainly had oil in it, it was tasty and full of healthy veggies. It was really the only vegan option on the menu, but in a beach town of seafood/burgers/hot dogs/pizza, it was something. Hubby opted for fresh Mahi Mahi topped with roasted corn and black bean salsa for dinner.
Our waitress was very good. The views of the sunset over the water were beautiful, however, I would recommend requesting a seat right by a window or outside if the weather allows. If you want to eat out at a sit-down restaurant in Flagler Beach while sticking to a plant-based diet, this is probably your best option.
